Potato Enchiladas

My mom and I love to make potato enchiladas! Now you can enjoy making and eating them too!!

Ingredients:

-corn oil (enough to cover the bottom of your pan)

-2 cloves of garlic

-1/2 a layer of onion

-salt

-corn tortillas

-potatoes (already mashed)

-clove (the spice) You can buy these at any mexican food store.

-ancho chile (it’s a Mexican chile)

Toppings:

-lettuce

-sour cream

-sauces

Steps:

1. Boil the chiles until they become soft. When they’re done, do not pour out the water!!

2. After they’re done, blend the garlic, onion, cloves, and chiles (with the water). Add a pinch of salt. Blend them until they’re liquidy.

3. Warm up the tortillas by heating them on the stove.

4. Dip the tortilla into the liquefied sauce.

5. Place them on the hot pan

6. Once they get warm, put the mashed potatoes in the center of the tortilla.

7. Fold the tortillas side to the center.

8.  Place it on a plate, then top with the ingredients.
